DUBAI: Madrid-born chef Dabiz Muñoz, founder of StreetXO Dubai at the One&Only One Za’abeel, is a globally celebrated culinary figure, known for his innovative approach to cooking. 

Muñoz has earned numerous accolades throughout his career. His flagship restaurant, DiverXO, which opened in 2007, holds three Michelin stars (at the time it earned its third, Muñoz became the second-youngest chef to lead a restaurant to this prestigious recognition) for dishes including dumplings with crispy Iberian ear and lobster with Thai curry, showcasing Muñoz’s love of combining diverse ingredients in unconventional ways. 

Muñoz’s fell in love with cooking at a young age, fueled by frequent visits to the renowned Viridiana restaurant in Madrid. It was there that he first encountered Chef Abraham Garcia, whose unique techniques left a lasting impression and helped shape Muñoz’s vision of cuisine as a medium for artistic expression.

With the dream of opening his own restaurant, Muñoz pursued rigorous training in top kitchens across Spain, London and Tokyo. 

Following DiverXO’s success, Muñoz launched StreetXO in 2012. The Dubai branch opened in 2023 and is the only location outside Spain where diners can experience Muñoz’s cuisine.

Here, the chef discusses favorite dishes, common kitchen mistakes, and how to nurture culinary curiosity.

What inspired you to take up cooking as a career?

I’ve had a passion for cooking for as long as I can remember — it’s something that feels like it’s always been in me. Growing up, I was fascinated by the process of creating meals, watching others in the kitchen, and experimenting myself. Seeing people enjoy the food I made was incredibly rewarding, and that’s when I knew I wanted to turn my love for cooking into a career.

When you started out, what was the most common mistake you made? 

Rushing. Patience is key in the kitchen. Taking the time to focus on every detail makes all the difference in the final dish.

What’s your top tip for amateur chefs?

Feed your curiosity by traveling and expand your knowledge by studying. Cooking is as much about learning as it is about experimenting. Buy lots of books, because they open up a world of techniques, flavors, and cuisines that will inspire you. The more you expose yourself to different ideas, the more creative and confident you’ll become in the kitchen.

What one ingredient can instantly improve any dish?

Chilis. They’re a wonderful enhancer and seasoning, full of nuances, aromas, and different sensations that can elevate a dish to another level. I’m obsessed with them because they add depth, heat, and complexity, turning even the simplest of dishes into something special.

When you go out to eat, do you find yourself critiquing the food?

Obviously because of my profession I have a critical and trained eye, but the truth is that when I go to other restaurants, I pay much more attention to where they excel, rather than where they fall short.

And what’s the most common issue that you find in other restaurants?

I care more about the faults in my own restaurants than those of others.

What’s your favorite cuisine?

Whenever I go to a restaurant, I always have an open mind and try as many different dishes as possible. This means I’m often surprised — in a positive way. It’s very common for me to order the whole menu.

What’s your go-to dish if you have to cook something quickly at home? 

Lately, I’ve been making a lot of bikinis (what we call a ham-and-cheese pressed sandwich in Spain), and I’m enjoying them more and more every day. They’re quick, simple, and always satisfying — perfect when I’m short on time but still want something tasty.

What customer behavior most annoys you?

Treating others badly is one behavior I dislike. Respect is essential in any environment, and seeing someone disrespect staff or act rudely is something I find frustrating.

What’s your favorite dish to cook and why? 

I’m passionate about cocido madrileño (chickpea-based stew) and croquetas. Both are very popular Spanish dishes, simple and very tasty, in fact I always have versions of them on the menu in some of our restaurants.

What’s the most difficult dish for you to get right? 

The more you make a dish, the easier it becomes — it’s really just a matter of time and practice. Even the most complicated recipes can become second nature if you repeat them enough.

As a head chef, are you a disciplinarian? Or are you more laidback? 

In the kitchens of the XO world, shouting, bad language, and disrespect are forbidden.
Throughout all the years of my career, this is something that I have learned and internalized. But this doesn’t imply any less discipline or demand from my side.

Warning: Requires some specialist equipment if recipe is to be followed exactly, including blast chiller, vacuum sealer, and robata (Japanese charcoal grill, similar to a barbeque).

Ingredients (for final plating):

Blue corn tortilla

10g yellow mole 

8g tamarillo emulsion 

50g cooked octopus

6g parmesan

10g carrots

4 unit sorrel

6g pumpkin seeds

1 unit lime wedge

Instructions:

Tamarillo Emulsion

Ingredients:

10kg peeled, aged, tamarillo (must be ripe)

2g ajillo

Salt (to taste)

Pepper (to taste)

Method:

Peel the tamarillo and vacuum seal it.

Once matured, emulsify everything, salt to taste

Cooked Octopus

Ingredients:

40g octopus 

2 onions 

5g garlic

2 bay leaves 

Method:

Cook at 85 degrees celsius for three hours or until tender. Cover the octopus with 85 degree water, add two onions, add 50g of garlic, add 10g of bay leaves. Strain and then blast chill.

Carrots

Ingredients for the Marinade:

0% white wine (no alcohol) 10g

Jerez vinegar 5g

Mandarin juice 10g

Olive oil 3g

Chopped garlic 6g

Pimenton de la vera 3g

Salt, cumin, oregano (to taste)

Red food coloring (to taste)

Method:

Reduce the wine and sherry vinegar by half. In a separate pan, fry the garlic in oil until golden, then add the remaining ingredients to the reduction.

Pickled carrots:

Peel the carrots and vacuum seal them with the prepared marinade.

Pumpkin seeds:

Lightly fry the pumpkin seeds in oil until golden brown, then season with salt to taste.

Plating

Grill the octopus on the robata, adding some smoking Sarmiento underneath for extra flavor.

Brush the octopus with lemon oil for a bright, citrusy finish.

Warm the tortilla and place it on the dish, seasoning it with yellow mole and a sprinkle of seeds for texture.

Position the grilled octopus on top of the tortilla, then add four small dots of tamarillo sauce around it.

Top the octopus with a light layer of cheese.

Garnish with thinly sliced carrots and fresh greens to add color and freshness.

Finish the dish with a squeeze of lime and a dusting of powder to enhance the flavors.

DUBAI: French luxury fashion house Chanel continues to spotlight regional models in its global campaigns and cruise shows, with its latest release featuring Mona Tougaard. 

The Danish model, of Turkish, Somali, and Ethiopian descent, was seen posing for Chanel’s new holiday campaign. In the image, Tougaard wore Chanel’s “Premiere Edition Original” watch in 0.1-micron yellow gold-plated steel paired with black leather. 

Her look was completed with a choker, ring, and earrings from the brand’s “Camellia” collection, crafted in yellow gold and adorned with diamonds. Meanwhile, French Algerian model Loli Bahia gave fans a sneak peek of the fashion house’s cruise show in Hong Kong on Tuesday through her Instagram account. 

She posted images of herself displayed on a wall, showing off pieces she wore in the show last week. In one shot, she’s styled in classic Chanel fashion, donning a cream crochet jacket layered over an intricate chain and pendant body piece.

In another image, she was seen in a brown leather vest matched with coordinating shorts and ballerina flats.

In June, Bahia walked the brand’s runway during Paris Fashion Week. She donned a two-piece ensemble comprising a tailored buttoned jacket complemented by a matching knee-length skirt in a delicate tweed fabric.

In May, Bahia and part-Saudi Amira Al-Zuhair walked the Chanel Cruise 2024/2025 show in Marseille, France.

Bahia donned a green ensemble, composed of a knee-length pencil skirt paired with a matching top, layered over a white shirt boasting a hoodie collar, while Al-Zuhair sported a vibrant yellow ensemble featuring hot shorts paired with a button-down top and a coordinating cardigan.

ALULA: The Royal Commission for AlUla has partnered with the National Archaeological Museum of Naples (MANN) to bring ancient works from its collection to Ƶ and the region for the first time.

The “Masterpieces of the National Archaeological Museum of Naples” exhibit is running at Maraya until Dec. 14.

Melanie de Souza, executive director of destination marketing at the Royal Commission of AlUla, told Arab News that the commission is grounded in “this very deep heritage.” 

“Our connections with Rome are strong, and for us, it’s about telling the continuous story of the role AlUla played in terms of trading routes and cultural connections across the world,” she said.  

Professor Massimo Osanna, director general of museums at the Italian Ministry of Culture, told Arab News that AlUla, like Pompeii and Naples, is “one of the most important archaeological sites in the world.

“In AlUla, you can understand how close the culture is between our territory in Italy and here,” he said. “This territory belonged to the Roman Empire. The Roman Empire expanded into Ƶ… In the inscriptions, you will find Arabic, Nabatean, and Latin.”

Fifteen masterpieces from ancient sites such as Pompeii, Herculaneum and Rome are being presented to a regional audience for the first time. 

Highlights include a statuette of Alexander the Great on horseback from the 1st century BCE and a statue of Roman Emperor Trajan found in Minturno, Italy.

“Some values and attitudes of human beings are very contemporary. We are very similar, and of course, society changes … but there are some aspects of human beings that are always the same,” Osanna said, explaining why the statues resonate with viewers today.

DUBAI: Nintendo’s iconic “Mario Party” returns in its latest edition: “Super Mario Party Jamboree.” With new boards, minigames and characters, the game promises a fun time and heated competition between friends.

Shy Guy has always been my Mario Party character of choice, and seeing the different colored Shy Guys in this version of the game has been so fun.

The game features four default boards, and three unlockable boards, two of which are returning classics from previous “Mario Party” games, “Mario’s Rainbow Castle” and “Western Land.”

One of the biggest differences in comparison to previous editions of “Mario Party” is the element of surprise. With many twists and unexpected changes throughout the game, there is really no telling who is going to win until the results are announced.

The risk-to-reward ratio is the highest it has ever been, with items that can cause you to lose your stars, coins and be bumped to last place in the final minutes of the game.

Another major change to the game is the new pro rules feature. This feature allows you to customize the rules of the game to reduce as many luck-based events as possible and raise the stakes. Item shops can now have limited stock, bonus star categories are revealed before the match starts and players can vote for which minigames are played.

The fan favorite rhythm minigames return and are all cooking themed, but the difficulty of these games has significantly increased. Once you get the hang of it, they get easier, but the Short-Stack chef minigame really grinded the gears. I personally found it to be one of the hardest minigames in the series.

The main drawback of the game, however, is the length of some of the minigames. Some seemed to drag on and I started to lose my interest or would get tired from holding down the buttons, or twisting my controller.

The Showdown minigames were not particularly enjoyable either, especially Luigi Rescue Operation. The length and difficulty were not appropriate for this type of gameplay, with most players likely to prefer faster-paced minigames.

For all our single players out there, the Koopathlon is the perfect mode for you. Although the difficulty and speed increases each round, it still proved to be a fun game mode for those looking for a quick and easy way to practice their minigame skills.

Overall, if you are looking for a fun game night, “Super Mario Party Jamboree” is sure to turn the heat up, whether you are playing alone or with your friends and family.

DUBAI: The Emirates Literature Foundation has revealed the speaker lineup and programme details for the upcoming Emirates Airline Festival of Literature 2025, officially marking the countdown to the 17th edition of the event. Leading the list of authors is US-Indian writer and Stanford University professor Abraham Verghese, author of “The Covenant of Water,” which rose to fame when it was chosen for Oprah Winfrey’s book club.

“The festival welcomes people who want to dream and imagine a world that celebrates our shared humanity and offers a place where people can tell their own stories, find themselves in other stories and connect at that very human level. And I think that’s why the 2025 festival is so important; it’s needed more than ever now,” she added.

Dania Droubi, the festival’s chief operating officer, revealed that the event will also host an international youth program.

“We have 150 university students from around the world coming to participate in our program, and they are going to be here in Dubai,” she said.

“They’re all students who speak Arabic and who study Arabic. They are going to be here to meet with another 150 from the UAE-based universities, and they’re here to attend and see the authors and the speakers … and just participate in these discussions, because the youth are the future.”

DUBAI: Miss Lebanon Nada Koussa is preparing to compete at the Miss Universe pageant in Mexico on Nov. 16 and she told Arab News why she is participating while her country is “enduring unimaginable suffering” under Israel’s bombardment.

The Miss Universe competition has contestants from more than 130 countries competing, with Koussa among a handful of candidates from the Middle East.

“Representing Lebanon on the international stage is always important, and it becomes even more crucial in times of crisis,” she said.

Israel’s attacks on Lebanon have killed more than 3,000 people in the 13 months of fighting along the border, according to the Lebanese Ministry of Public Health on Nov. 5.

“However, by participating in the Miss Universe competition, I am amplifying our voices as Lebanese people who are enduring unimaginable suffering,” the contestant explained in a written response from Mexico.

Koussa hails from the village of Rahbeh in Lebanon and has a master’s degree in clinical psychology.

She was crowned Miss Lebanon in July by a judging panel consisting of eight women: actress Razane Jammal, model and fashion blogger Nour Arida, interior designer Diane Ghandour, model and socialite Georgina Rizk, Dr. Petra Khoury, socialite Paola Pharaon Rizk, TV presenter Raya Abirached and restaurateur Mireille Hayek.

 
 
 
 
 
 
 
 
 
 
 
 
 
 
 

Koussa hopes to use the Miss Universe stage to highlight the importance of mental health, especially during times of crisis and conflict.

“Lebanon has endured many hardships, and I am dedicated to raising awareness about the need for psychological support for those affected by trauma,” she explained.

Koussa joins Miss Egypt Logina Salah and Miss Bahrain Shereen Ahmed from the Arab world. All three are currently in Mexico on a promotional tour before the pageant kicks off this week.

“This is also a way to ensure that Lebanon remains visible on the international stage, rather than being marginalized,” Koussa said.
